at wholefoods for lunch every day. its expensive but tasty. i also eat fast food but have cut back dramatically.

What to do with some leftover rice?
I mixed it with 5 eggs and leek (finely cut)and herbs
Put a little cheddar cheese on top
30 minutes in a hot oven.
Served with a large bowl of green salad.

It is really a challenge to invent a tasty, tempting and healthy dinner every day.
Todays dinner was both tasty and healthy:
Brown basmati rice
A large bowl of mixed salad with feta chees and green olives. No dressing.
Bean casserole with kidney beans, tomatoes, carrots, onions, celeriac, garlic, ginger and jeera.

A quite healty dinner today, with homemade cauliflower soup.
The lunch was also healthy: rye bread, cheese (soy), carrots and an apple. Herbal tea.
Not so healthy: An oatmeal biscuit and a small piece of dark chocolate.

Right now i have a blueberry cake (lots of eggs, lots of fresh blueberries) in the oven and homemade icecream in the freezer. Not so healthy, but I think that once in a while it is nice to have a treat. At least it is all homemade and many of the ingredients are organic. So I look forward to warm blueberry cake with ice cream this evening.

Together with the rest of yesterdays soup and some rice it made up a nice and healthy meal.
In my salad I put:
Lettuce
Tomatoes
Cucumber
Grated carrots
Hardboiled eggs
A little feta-cheese
Roasted nuts and seeds on the top.

I made a large pot of vegetarian soup, with beans, vegetables, tomatoes, spices and whole grain. It took some planning (beans and grains have to be soaked overnight) and quite a lot of time to boil the grain and beans, but the soup was a great success, and I felt very happy to have provided a really healty meal for family and friends.
