not going to lie, my cooking has definitely improved. after reading over past entries, i’ve realized that i have come to that point where i am more often than not making up stuff as i go, being creative and using whatever is around the house to come up with some pretty awesome dishes. even simple things such as mac n cheese gets a little ashley twist to it- spicy habanero cheese and zucchini! its very rewarding to make a good meal for yourself and people you care about :)
speaking of the like… during the course of a conversation today, i agreed to make a fancy dinner and dessert with a new friend of mine. oh, and it has to be something neither of us has made before! i can’t wait, i think its going to be pretty exciting :)

How to learn to cook like a chef
How I did it: Truth be told I just ate foods that I liked...went to places I liked & dissected the foods, took my time eating them & tasting them & wondered how I would do it different. What would be my flare on it?? I'd go home & recreate the meal...sometimes they'd turn out amazing other times not so great but I knew what to do differently.
I don't do this major fancy french cuisine but I can throw down bobby flay style with the some of the best of them :) I don't need a cooking school to teach me how to cook the stuff my family loves to eat. I just need to listen to the "mommy yo make da best in ___ da world" I get that a lot, & yes she is only 3 but she likes it & she's my #1 critic :) that's what matters!
Lessons & tips: Cook with your heart!
Dance in your kitchen, listen to music & sing & dance while you prepare your meals. Your emotions while you cook definitely show in your food!

ahh.. so much to write. well i shall work my way through in no particular order. recently my mom received a promotion, and with this change came more hours, and with more hours came my father and i looking at each other around dinner time with our stomachs growling. realizing that something needed to be done, i made a deal with my mom. i agreed to do the grocery shopping, and make dinner in exchange for complete control of the food that enters the house and our mouths at dinner. i did this in an effort to help change poor eating habits of my family, and to gain some valuable cooking experience. so far, its been a blast :) i have finally conquered my fear of meat, and have learned that a steamer is this girl’s best friend.
as a side note, i have become addicted to ramsay’s kitchen nightmares. i’ve always loved shows like top chef and the like, so my recent finding on bbc america was quite a delight :)

recently i made dinner for a friend, and it turned out amazing! :) i was so excited because it was sort of a spur-of-the-moment deal where we were hungry and i didnt feel like spending money (especially on fast food), so i offered to make something. it was fun to do, and the food was delicious :) now i want to do it again, but with a group of friends :)
ive been baking a lot, and honestly, its great fun and quite theraputic.

my sister is coming over for lunch. Im still not sure which way to take lunch. Im making pork tenderloin…but I didn’t know if I wanted to do more like comfort food with mashed potatoes or red potatos & salad with some veggies? Not sure Ill decide in the am either way its gonna be good! :] Im excited to entertain!!

I came up with another creation by the seat of my pants. hubby had 2 bowls…it came out good :] Im happy. He even asked me what the sauce was because he liked it.
Pasta w/grilled chicken and fresh spinach

and parmesean cheese :] it was good!! It had some pretty colors to it too!

my goal…its probably gonna be edited :] I want to cook like a chef a bad ass chef…but I want to cook healthy foods. foods everyone can eat and feel good about eating it. Good sized portions so you don’t feel like your pants are going to explode. I’ve done that on more that one occasion. It’s not always the best feeling. I do a good job of cooking healthy foods now…but I want to do it more often.
