I haven’t been that active with this but I try to encourage myself in the future. I propably helps that I’m mooving abroad for a while so I have to use different groseries than those I’m used to.



Feta-cheese potato salad 16 months ago

Last weekend I invited some of my friens over and made them some Feta-cheese potato salad that I had never made before. It was SO good! It was easy to make and I’ll definitely make it again. I’ll ad a photo later, but here is the recipe:

Feta-cheese potato salad
(for 4persons)

700g new potatos (small ones)
200g feta-cheese
2 spring onions (stalks also)
salt
pepper
fresh parsley
olive oil
lemon juice

1. Boil the potatos. Let them cool down a bit and then halve them.
2. Cut the feta in small pieces or crumble it.
3. Mix the potatos, feta and other ingredients in a bowl.
Serve the salad cold or slightly warm.

I made few changes to the recipe: I didn’t use lemon juice due not having it and I used fresh chervil in stead of parsley for the same reason. And I have to say that chervil tasted just great mixed with the other ingrediences!

I cooked again tonight. I made some chicken and roasted potatoes. Not very exciting, but at least its not McDonald’s!!

It’s been about a year since I’ve been on this site and I decided to come back so I can get back on track with making some changes in my life. I’ve been doing pretty good about cooking at home more. Usually I feel too lazy/tired to cook so we just end up getting fast food. But for the fast few days I’ve been making a point to cook even if I don’t feel like it. Tonight I made a pizza with sun-dried tomatoes, bell pepper, onion, olives, chicken and mozzarella cheese. After I finish cooking I always feel so good and happy that we saved money by eating at home! Besides, homecooked food is better than fast food any day!!

I’ve been doing a lot better about cooking more meals at home. write out a bi-weekly meal plan, and I try to intriduce at lest two new meals into it. I have a hard time with getting in a food rut and eating the same old things! I really need to expand on the types of veggies I eat.
