xsiveguy is reading "The Mythical Man-Month"
How I did it: For Christmas my mother and I make home made gifts. Some times that’s candy canes or nut brittle but last year it was hot chocolate mix and marshmallows. I really like making these from scratch, they taste so much better. And if you are giving them away people are just amazed that you’re able to make them.
Lessons & tips: Try out different recipes, use an electric mixer not a hand mixer though, and get rid of them quickly. Ours were home made with no preservatives they will rot in a matter of day because of this though.
Resources: We sued a cook book, but here is a good resource as well http://homecooking.about.com/library/archive/bldes19.htm

They weren’t pretty but they tasted OK. I was a little food scientist as a child. I liked the taste of bananas after brushing my teeth and once ate fried eggs and steamed rice with fish sauce for lunch every day for two weeks. I think I need to get some of that type of creative energy back.
I made my marshmallows yesterday. they came out great. The texture is right on. Next time I will use less vanilla I think. Also I forgot salt, oops.
Not Martha posted a link that gives a good breakdown on marshmallow-making.

I have tried twice, unsucessfully, to make vegan marshmallows. I think next time I will try it with good ol’ horse feet, and then if that works maybe I’ll venture into hoofless ‘mallows.
