    mission: tasty cheesy crunchy things, actually an appropriation of a favorite crepe of mine.
    status: accomplished! i made these pretty much by instinct, but here’s my “recipe” for anyone interested. you can put pretty much anything you want in an egg roll, but i love leeks and have always wanted to try cooking them. enjoy!

    1. go to store; find pre-made egg roll or spring roll wraps
    2. prepare leeks: this involves cutting off any nasty looking bits, slashing the green leafy ends into thin strips, and then subjecting them to a thorough washing to remove grit.
    3. steam leeks in pot until they are a pretty color and sort of soft; cut into manageable bits.
    4. prepare pine nuts: fry in olive oil with salt until brownish.
    5. get out egg roll wraps; put in spoonful of goat cheese, some leek strips, and a sprinkle of nuts; wrap up.
    6. heat 1-2 inches of vegetable oil in a deep pan; fry rolls two or three at a time until they look crispy.
    7. feed to adoring family!

    if you add indiscriminate amounts of cumin (lots), ginger (lots), cayenne (some), and turmeric (enough) your food will taste good. bonus points for cardamom, coriander seeds, and garam masala.

    last night i made “aloo gobi”, nominally a proper indian dish, but actually it was just me tossing cauliflower, potatoes, an onion, and whatever else came to hand into a big skillet and cooking until done. yay! nothing says summer like having all the burners on.
