My very first batch of kombucha tea is finished. I’m making the second batch right now. I think I will experiement with fermentation times on the baby culture that grew. I would like to leave it fermenting a bit longer next time. Mine is quite a bit sweeter than the store bought stuff, and I’d like it to be more acidic.

Wow, it has been a while since I have been here. I make and drink Kombucha Tea all the time and I don’t just love the taste but it is great with pom juice and so good for you, the kids love it too. Yea Me!!
My mother and grandmother make kombucha tea—it’s a mushroom that you grow on the top of a tea mixture, then pour off the tea, drink, and brew it again (the whole process takes a week or more). It is reputably very good for you, and I used to drink it sometimes (it tastes quite tart, however, so it should be thought of more as good medicine than a relaxing tea drink).
