Good intentions, so-so meals. 2 years ago

I made potato-leek soup in the crockpot – it probably would have been good except everything, particularly the leeks, were so over-cooked by the time we ate it.

Yesterday I made squash boats. Cut a butternut squash in half, rub with a little olive oil. Make a filling made of: rice (I used brown rice), cracker meal, finely-chopped onion, chopped walnuts, nutmeg, sage, brown sugar, black pepper to taste, and stir it all together with a couple of egg whites. Fill the squash halves with the filling and bake on 350 until tender. So, my DH put them in the oven at around 3, but he knew we wouldn’t be eating for a while so he set the temp at 325. We both got so busy – he had to pick our son up from his grandparent’s, I had to take our daughter car shopping (she got a really, cool little 93 Saab with a moon roof, btw). We didn’t eat until after 6:30 and the filling was all dried up. The squash, however, was delicious. I will give this one another chance, but my advice; DON’T cook this for 3.5 hours!

Now I need to figure out what to do with the rest of my leeks, potatoes, and some red cabbage I got from CSA. Any ideas??

I made a root vegetable roast with potatoes, baby carrots, turnips, beets, garlic, onions, thyme, and parsley. It was so delicious, I was daydreaming about leftovers all day at work! I also took a bag of tart apples and made a really tasty apple crisp. Mmmm.
