It took me a long time, up until this year, really. I’ve been cooking for years, but rice and hard-boiled eggs were my downfall. I owned a rice cooker eight years ago and still couldn’t do it. But finally, this Spring, it worked. I used twice the water for the amount of rice and it was beautiful! What really helped was that not quite a year ago, I bought new pots and they have glass lids. I could check while the rice was cooking to see if it was too dry, too wet. It made such a huge difference.
One of the reasons that I love rice so much is that it freezes well. So, I cook up a huge amount, put individual portions into ziplock baggies. Then I put those baggies into a large freezer bag and store it all in the freezer. When I’m packing my lunch, either the night before or that morning, I pull out a bag and stick it in my lunch sack. It works to keep my lunch cold and then when I’m ready to eat, I just microwave it on a plate or in a bowl for a few minutes and voila! Lunch.

I love rice and pasta. One of many reasons why I couldn’t possibly diet, next to my love for food, is that I love rice and pasta. Cooking rice is easy, whether by rice cooker or by stove. I love medium grain rice. Yummy, yummy.
This is one of the first things I learned to cook since it is inexpensive and I love rice. Water, butter, salt and rice. Boil, turn down the heat, and cook until the water is mostly gone.
Eat with a little butter and sugar or just butter. Yum!!
Buy a rice cooker, its fantastic. You can make everything from jambalaya to risotto.

Turns out that a ricecooker is a really, really cool toy. Get the kind with a steamer attachment.
Once I stopped cooking with the same brand of rice, it just got easier to buy a cooker.
Dinner is much much easier, AND I figured out how to finally cook more exciting kinds & blend with grains. Really. Its much cooler than you think.

I love rice and it’s so easy to make. Boil the water, throw in the rice - half the amount of water in rice (i.e. 2 cups of water, 1 cup of rice) - bring back to a boil and then turn it down low until the water is gone (about 12 minutes or so). Perfect rice every time without cheating with Minute Rice (blech).
Why can’t I cook rice?
I don’t want to get out the steamer, or rice cooker or some other appliance anytime I want to make rice. I just want to put it in a pan and cook it and have it turn out and not stick to the bottom of the pan or come out soupy. Argh! Stupid rice.
