I posted to our monthly potluck group that I’d be bringing tom kha gai and rice (and those baked pears DC loves so much) so I will accomplish this goal by Sunday evening.
It would have helped if I’d had the list of ingredients with me today when I took my mom grocery shopping. Writing the in my reminder book NOW! . . . did that :o) . . . next grocery trip I’ll be prepared.

galangal root – frozen is ok
kaffir lime leaves or 3 fresh limes?
fish sauce (this sounds too generic to be easy to find, I’ll probably have a dozen choices and be stymied)
lemon grass I found this in a paste form as a substitute but if I find some fresh I’ll pick it up
I know that the first time is the hardest. Once I make this I’ll probably be able to make it easily again and again. We love it but $9 for takeout strains our budget.
