"I had completely given up on this goal, now I'm happy to move it to my "DONE" list"
How I did it: I started by being really hard on myself about the amount of processed food and junk I was eating, and made a real commitment to cut out junk food and replace it as much as possible with food in it's purest edible form (either raw or simply cooked).
I replaced most of my mcdonald's breakfasts with fruit, lunches with fruit and raw vegetables instead of my usual take-out and every night for dinner, a plate heaping with cooked veggies.
Lessons & tips: My biggest difficulty was finding the time to prepare healthy foods, especially since that time preparing food for myself was competing with time spent preparing food for my picky and meat eating children.
Switching to raw foods for breakfast and lunch actually cut down on my food preparation times. And for dinner I just decided to keep it simple by making the same dish every night, but slightly varied. I make a medley of roasted vegetables every single night by mixing whatever's at hand (potatos, yams, peppers, carrots, parsnips) with broth, olive oil and garlic and cooking it slowly, basting every so often.
I've also been preparing all the raw vegetables on sundays and wednesdays, so there are always carrot sticks, broccoli and cherry tomatoes in the fridge. Since the kids won't eat the roasted vegetables at dinner, they get a combination of raw veggies and frozen peas or corn each night.
