found so many banana bread recipes but the one with walnuts is the best in my opinion. stay haven’t perfected it but note to use really ripe bananas so it’s tasty. i think my banana bread is kinda dry so need to find a good moist recipe.. still on the lookout!

That’s what I learned yesterday making a couple loaves of banana bread with my mom (she’s visiting). If you toast good walnuts just right and chop them up a bit (I don’t like them too big in the bread), they taste wonderful.
I used the Cook’s Illustrated recipe and it worked nicely.

I have decided that I don’t want to make banana bread anymore.
I want to lose weight. And, making cakes, and having them in my house is not a good way to lose weight! At least if I buy a single piece, and eat it, I won’t keep going back to the kitchen to get more!!!

I put together all the ingredients for a banana bread this afternoon. I had a few raisins, so I decided to throw them in ;)
It came out quite delicious —so much we already ate half of it just three of us!!

...but hadn’t got the photo from my camera till now. I followed alcachofa’s recipe, with a few modifications. I used brown flour and brown sugar, which made the finished result a bit coarser than it would have been with white – next time I’ll use half and half, unless I can find that superfine brown flour. I also replaced half the butter with homemade applesauce, and (since applesauce is sweeter than butter) reduced the sugar by about a third. I didn’t use any nuts, but I split the mixture between two 1lb loaf tins and added a handful of dried cranberries and blueberries to one of them.
It was easy to prepare, and came out absolutely scrumptious. Little Bro and I polished off almost all the plain loaf hot from the oven, and I sliced up some of the fruity loaf for the freezer – it freezes and thaws well and it’s great toasted, too. Definitely one to make again!

The banana price around here is down to around $2 a kilo, and you don’t even need a whole kilo of bananas to make banana bread! So, making banana bread with them is no longer out of the question.
So, next weekend, my plan is to make banana bread.
