I decided to go all out and make an apple pie last weekend and it turned out great! I shared it with my RA staff and they loved it. Definitely try it!

Sometimes I bake them really from scratch, where the apples and plums come from the trees in the backyard, and I used lemons from a friend’s garden to flavour the short-crust pastry that I also make from scratch. It’s the best way to go baby.

All the clasics plus a few. I now do a thanksgiving deep dish torte: homemade mincemeat bottom later, then a pumpkie pie-ish custard layer, topped with a think crisp very sweet pecan pie layer. Big production to make but at Thanksgiving, with this and an applie pie (and ice cream or whipped cream)... EVERYONE is happy and there is not a truly scary pie-to-person ratio…

One benefit of working out in the middle of nowhere and living where I work is that we have an awesome kitchen staff. I talked to Liz (the head cook) about pies and she said that although she is the baker of the family her sister makes the great pies. But she did give me tips on using very cold water and very cold butter and trying not to handle the dough too much while making the crust.
