I’m the only one left in the “dinner club.” Looks like it’s time to mark this goal “DONE”, and it certainly was “Worth Doing.” We did have some crazy days and zany nights, and I’ll remember them fondly.

I haven’t gotten this down to measurements, but this is an experimental thing I plan to try, I’m going to put this over stuffed (with Ricotta cheese.) Spinach Rigatoni noodles.
White sauce made with:
Milk
Shredded Romano cheese
Shredded Asiago cheese
Half and Half
Margarine
Garlic Vinagrette dressing
Olive Oil

Here is a chicken recipe that also includes the use of popcorn as a stuffing. Imagine that! When I found it, I thought it was perfect for people like me, who just are not sure how to tell when poultry is thoroughly cooked, but not dried out. Give this a try.
6-7 lb. chicken
1 cup melted butter
1 cup stuffing (Pepperidge Farm is good.)
1 cup uncooked popcorn (Orville Redenbacher’s Low Fat)
Salt & Pepper to taste
Preheat oven to 350 degrees.
Brush chicken well with melted butter, salt and pepper. Fill cavity with stuffing and popcorn.
Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds. When the chicken’s ass blows the oven door open and the chicken flies across the room, it’s done.
And you thought you couldn’t cook!

2 cans of enchilada sauce
2 jars of salsa
2 cans of refried beans
(16 oz. sizes)
1 lb. of ground beef or ground turkey
1 lb. of shredded cheddar cheese
1 lb. of shredded mozarella cheese
Cook it in a microwave until the cheese melts and it gets thick, then dip some chips in it, yum!
