My old arch-enemy... 14 months ago

I am probably the least “picky” person I know. I’ll eat pretty much anything and love it; sushi, shrimp, mushrooms, broccoli, brussel sprouts… You get the idea.

But eggplant…

Eggplant is the only vegetable (or food, for that matter!) that made me nauseated when I ate it! Ugh!

My grandfather always told me that eggplant is wonderful and if I didn’t like it, it was because it was prepared wrong.

I don’t know exactly why I got thinking about it recently, but I decided that I was going to try to “befriend” the aubergine.

Tommy and I have our preferences: he goes to allrecipes when he’s in charge of supper, and I head to care2 when it’s my turn to cook.

I found Grilled Eggplant Burgers and decided to try it.

From the comments I learned that eggplant will be bitter unless it is sprinkled with salt, or left in salt water for at least 20 minutes. So I cut it up, stuck it in a bowl with water, and after a half hour, Tommy grilled it up on the bbq.

WOW. It was SO GOOD.

Eggplant, you and I are friends now. I was wrong about you and I look forward to getting to know you much, much better in the future.
