A lot of folks told me before I made my first that it was terribly involved - then I did it for the first time and it was a treat and really pretty simple! Just involves a lot of stirring and knowing how to prep everything beforehand - then it all comes together. Mind you, risottos can be pretty rich, so don’t make them all the time!

I have wanted to learn to make Risotto for AGES. Recently my brother in law taught me how to and I made a great risotto with chicken, mushrooms and asparagus. The trick I learnt is 1:3 – 1 Part Rice to 3 Parts stock… YUMMMMMM!!!

I was astonished at how easy it was. All it took was a wooden spoon and constant stirring! Once you know the basic idea, you can invent all your own risottos. I made a particularly nice white wine and mushroom one the other day.
