kaid1Forks Over Knives

I had a documentary playing in the background on Netflix last night. It talked about the benefits of a vegan diet, which made me feel silly; my Monday was full of eggs and cheese. Lower risks of cancer and coronary issues. Reversal of atherosclerosis, better circulation.

I don’t think I want to switch to a vegan diet, even just for Mondays, but I think a day here and there spent vegan could be beneficial for me. 12 months ago

Considering I’m not cutting out dairy or eggs, this has actually become a very simple task. I think it helps that I’m not doing it every day of the week. Overall I think it has made me more conscious of how much meat I do eat, or how often I crave it. If there’s a downside, it’s that I am definitely taking in a lot more carbohydrates(which is only a pain because I’m also trying to lose weight).

This is delicious. Water- not chicken stock- was used along with butter. I don’t think the butter added much considering the oil used, so next time I think I’ll skip that addition. I didn’t make the grilled cheese to go with it, but perhaps next time.

I’m getting used to the options available, and it’s really not such a hard thing to do at all. I admit that I still don’t plan ahead like I should, but I believe that’s something I’ll work out in time. A little quick thinking on my feet doesn’t hurt me at all :) 15 months ago

It’s best to plan ahead of time. I winged it this past Monday and ended up having leftover chicken staring me in the face every time I opened the fridge, scrounging. I pulled through breakfast and lunch at the house, but ended up going out to dinner with friends and getting a veggie pizza. Yummy, but not ideal! 15 months ago


kaid1Meatless Mondays

It’s official. Today will be my first Monday without any meat. This one day per week will be my approach to getting more acquainted with vegetarian recipes and [cumulatively] spending at least a month of this year meat-free.

This early in the game, I will be allowing animal products such as eggs and dairy. As time goes on I’ll see how close I can eat to the bottom of the food chain without going crazy. 16 months ago

I have officially decided to knock this goal off my list by giving up meat for the month of November. I figured this would be a good time to go for it since in London they have many vegetarian choices at the stores and restaurants. It will also be helpful that my roommate is a vegetarian so he can help me out along my journey. Wish me luck, today is day 1 and i’ll try to keep you guys up to date on my progress! :) 18 months ago
