    As we were gluten intolerant when we were younger, many years ago, my mum found the perfect recipe for wheat free brownies. I’ve taken it on now and make them every couple of months at least. They’re sooo morish! And so quick and easy to make. Fool proof! My favourite!

    I have two perfect recipes to try, one for fudge brownies, and one for extra-fudge brownies (much, much, much more chocolate). I suspect this is going to be a very nice adventure.

    Someone ate nearly every scrap of chocolate in the house except a scant half-cup of chocolate chips. (Good thing the Halloween candy is hidden in the cabinet next to the hedge trimmer in the garage.)

    So I made cocoa brownies:

    1/2 cup (1 stick) butter, melted
    1 cup sugar

    mix

    Add 2 eggs, one at a time, and 1/2 tsp vanilla

    beat

    1/2 cup whole wheat flour (taking a page from Jim Carson’s book)
    1/2 tsp salt
    1/2 cup chocolate chips

    stir gently

    spread in greased 8×8 square pan, bake at 350, for 20 minutes

    this is my extremely lazy brownie fudge recipe… consider yourselves blessed.

    Line a loaf tin with baking paper and preheat the oven to 180 degrees celsius. Mix four tablespoons of cocoa, a cup of self raising flour and a cup of caster sugar together. Melt 100g of butter and get two eggs. Put these in and mix it all up. Blob it into the tin and pop in the oven for half an hour. GOOEY GOOEY FUDGE BROWNIES AWAIT!

    o Fudgy, not cakey
    o Made with baking chocolate, not cocoa (cocoa tolerable, if chocolate not available)
    o Nuts not necessary, but if you’re adding nuts, almonds are the best, mainly because I’m allergic to walnuts and pecans. Filberts are acceptable.
    o Frosting is unnecessary with fudgy brownies; however, if you are going to do frosting, chocolate rum flavor is the way to go.

    I already have a truly decadent brownie-from-scratch recipe. I still haven’t hit on a good every day brownie recipe. I’m trying to find something that approaches Betty Crocker’s commercial recipe. Why not just buy it? As companies make things easier for lazy people (just add water), the flavor changes. Sometimes it is better (the cakes are wonderful) but I can tell that the brownies are not as flavorful. Happily, most people don’t mind helping me test brownies. I wonder why that is?

    I did this once before I went on holiday, and then once while I was away and both times they went down really well :-) I enjoyed making them, and enjoyed eating them even more! They went so well with clotted cream and blackcurrent coulis. Yum. Must make more brownies…
