sabryn okay...how about a calm December?
Okay, this isn’t a brand-new recipe; I used one in a veggie cookbook as a starting point. But my version has way more veggies, and imo a much better consistency and taste. (The “real” recipe only called for a tiny bit of veg, and was kinda runny. Blech.)
Quantities are approximate.
1/2 c or so cottage cheese; amount depends on how cottage-y you want it. (I like mine about half and half.)
1/2 c or so mixed vegetables, cooked, drained, and rinsed with cold water until they’re cool.
Additional seasonings as desired; I cooked the veggies with a sprinkling of dried shallots and celery (fresh would be better) and a dash of dill.
Ranch dressing to taste (I used around 2 tablespoons)
Stir together and put on toast, English muffin, crackers…whatever’s on hand. I put mine on toast – used probably 1/3 c. From past experience, English muffins are less messy.
I picked out the green beans from the veggies, because I hate the texture of frozen green beans. You might need to use more cottage if you leave them in.
