I did not expect this to be as delicious as it is.

there are a few different types; I like Bok Choy kimchi the best

I was probably like 6 months old or something. Anyway, I’ve been eating kimchi since then, but I am Korean. I have a fairly high tolerance for spicy foods, so I don’t think most types of kimchi are all that spicy.
I do highly recommend everyone to at least try kimchi.
I’ve had kimchi from a Chinese restaurant (yes, Chinese, not Korean, I know…this Chinese restaurant has a lot of pan-Asian cuisine), and it was awful. I had kimchi made by a family friend who is Korean, and it was amazing. My roommate next year was raised in Korea, so hopefully she can make it or at least get us a good batch from somewhere. I love spicy foods but hate cabbage, and yet I love kimchi. In fact, I recommend Korean food in general as my favorite Asian food other than Thai and Indian.
I had “kimchi” at a local International festival; it seemed to have cabbage in it. Not much for taste, except you could taste the cabbage, but it was so spicy, in an acidic way, that dwelled on my tongue for a very long time and gave me fire-breath.
I definitely don’t hate it. I’d eat it again if offered, but I won’t ever pick some up at the local Asian grocery. But it’s so hot and has little taste otherwise, I don’t see why you’d pick it up as a favorite food.
I just tried it for the sake of no longer having to wonder what this famous ‘staple’ of Korean cusine tasted like.
Definitely worth trying. Cucumber Kimchi is awesome. Not too big on the mushroom one though. If you live in Winnipeg and wanna try it out: 1811 Portage.
