...and therefore I didn’t actually complete the goal. But I was averaging well over 3000 calories/day of sweet juicy fruit. It was extremely difficult to get enough quality carbohydrates while training for Ironman. However, I had my best year of racing ever. I had to supplement with Chipotle vegan bowls and lots of rice and pasta for 6000 calorie days. As I begin the new training season, I am amping up the rice and potatoes and eliminating the pasta. I have been much more proactive about buying fruit in bulk for the week. Having stashes of dates and berries in the freezer really helps. I also want to eat a lot more bigass salads at night since I had trouble sleeping with so much fruit after late nights training. 23 months ago
