My dad has a homestead near McCarthy, Alaska. Every summer I go out and help with the garden. It ends in this huge cultivation that produces crates and crates of produce (& flowers). I get to take home as much as I can stuff in the car… my favorite is the carrots, which can be HUGE and taste a bit like honey. Oh they are sweet! Digging up the potatoes is amazing hard work, and let me tell you that eating potatoes after that makes you appreciate them quite a bit. Not to mention
that eating homegrown produce makes you very proud of yourself and feel very self sufficient. ESPECIALLY when you give some to someone else and they get to eat what you have grown. That is a great thing.
