Having a hard time with this one. Just not into cooking lately. Everything seems so been there, done that. As I tell my hubby, it is difficult to come up with something new and different that is also easy and quick to make, inexpensive, relatively healthy and will meet the approval of the kids and adults in our household. That’s a lot for one meal to accomplish, but that is the goal of every meal at my house.

I am very bored with cooking right now. Coming up with something interesting, quick, cheap and that the kids will eat every night becomes a chore. I should have more help from my hubby in this department, but I don’t. I used to really enjoy cooking. I hope to get my children back in the kitchen with me. Hopefully spending some quality time with them and teaching them a few basic kitchen techniques will give me the inspiration I need to be more creative.

Rhubarb Pie  — 10 months ago

In my futile attempts to prolong the fading summer, I baked a rhubarb pie today. I remember my grandma making this pie during the summer and hearing Garrison Keillor talk about it on the radio when I was little. I made a mistake and baked one of the pie crusts to early, but I think it’ll be okay in the end.

Heritage Tomatoes  — 10 months ago

My mom and I bought oodles of heritage tomatoes at the Farmers Market yesterday. I remembered reading some recipes online at the NY Times website so I found the article and chose which ones I wanted. I baked tomatoes with goat cheese and tomato guts, made a garden veggie salad, made a tomato salad, and squeezed tomato guts onto a piece on bread and made Catalan brushcetta.
Everything was tantalizing and healthy! I added everything to my cookbook with plans to make it all again next summer.

Sunday Brunch  — 10 months ago

Due to my ability to sleep very late on weekends, I am now cooking brunches. Today I made an egg white omelet with peppers, onions, and mushrooms with eggs from the farmers market, some Greek yogurt, banana bread, a banana, some granola, a crumpet with blackberry jam, water, and herbal tea. I did not finish all of it, but I had a lot of fun cooking this delicious and healthy meal.

Greek food  — 11 months ago

My aunt lives in Athens and I went to visit her when I was five. While we were there, my mom wrote some recipes down in a little cookbook. So today, one of my friends who just got back home from a month in Paris came over and I made us a lunch of Greek food. I made Tzatziki, spanakopita, and Greek salad. It was yummy. I love making tzatziki; it’s simple and delicious.

I also made my parents some quesadillas, rice, and beans for dinner. I really need a cookbook so I can experiment more.
