I'm about ready to give up 2 months ago

If I was single this goal would be easier. It was easier to be vegetarian when I was sick because meat smelled bad. NOw I’m well, all food smells fine again. I do focus more on eating only one meal a day with meat. I do eat more vegetable dishes. I enjoy vegetarian foods. I appreciate all the good advice given to me by vegetarian 43 thingers.

Eating the evening meal with my husband is a habit of more than 13 years. It’s one we both enjoy. I just can tell him to cook meat for himself. It would be like a betrayal of a promise I made to him. I can modify my vow to become a vegetarian some. I can eat 2 meatless meals a day and eat what he eats. When I can eat a meatless meal for supper as often as possible. I think it would be easier if I were single and if I weren’t devoted to my husband. I don’t know if that makes sense but I don’t think I’m selling myself out. I’m vowing to increase my consumption of fruits, grains, and vegetables. I’ve lost some weight with this aim and this is part of my intention. I think it will even out. perhaps I will slowly convert him, too but it will be slow. It’s okay. I’m open to learning for the better health of us both.

Yummm! I’ve finally figured out something I want to eat. Just need the recipe on how to marinate and sautee the mushrooms now. I spent roughly 3 days on a veggie diet last weekend except for 2 lapses. I go feeling weak so I may need to add protein in some form. I do have a B12 deficiency so I need to be careful about that.Still felt nauseated but still I’m learning how to eat.

The big problem with this goal is that very little is appetizing to me right now. I ate wheat crackers and water for breakfast. I ate Mexican for lunch. I usually clean the plate but only ate half. I got a chicken enchilada with rice and beans which seemed fairly innocuous. Now it’s supper time and have to think of something not nauseating to me that my husband will eat. Interesting but whole wheat crackers, diet dr. pepper, tea, water, and chocolate do not make me queasy. That leaves a zillion things I’m not interested in eating. Sometimes morningstar burgers are tolerable with cheese on a bun. Steamed veggies with rice are often tolerable. Canned veggies—ick! This pervasisve nausea might be more amusing if I were pregnant but I’m positive that I’m not. It’s the vestibular disorder (balance/brain).

Fresh vegetables taste so much better in stews than the canned ones I usually use. I’m decreasing the amount of meat I’m eating. No meat for breakfast and lunch. A small portion of meat for supper. Since I’m out of work, it is easier changing the things I cook and the way I cook them. It takes conscious cooking to be aware when I am using animal products that I want to avoid. Giving up dairy is going to be fairy difficult. I love cheese, ice cream, cream cheese, butter, milk shakes…

not very easy to do 7 months ago

I’ve managed to put in vegetarian dishes here and there. Reducing my meat consumption is the best I can do right now. At least I don’t eat meat every meal. changing my food planning but not changing my husband’s makes it more complicated. Not feeling very well doesn’t help either. I’ll keep plugging along and do the best I can.

I’ll elaborate later but my doctor thinks changing my diet is necessary to turn my health around. She a pretty good judge of things and I trust her. I was one 20 years ago but I’ve forgotten a lot of what I used to eat. I need to start researching it again. Don’t know what I’m going to do with the husband but I’m doing it slowly so mayble he’ll get into it, too.
