Flatten a ball of dough into a nice thin disk with a rolling pin. You want a little flour on the dough but not too much, keep just a little sticky. Cup the fingers on your dominant hand and turn it palm down. Pick up the dough disk with your other hand and lay it flat across your knuckles on the cupped hand. Then cup the second hand the same way and place it under the dough behind the first hand. Heft the dough a couple times and each time you heft, pull your cupped hands away from each other slightly, pulling the dough out from the center with your knuckles. Because one hand is in front of the other, the dough will also rotate slightly in that direction. You have to then move your hands quickly back into position before the dough comes back down onto your knuckles. Bounce it higher and higher in the air off your knuckles every time you heft. Then you can begin to pull your hands apart faster to make the dough spin faster. If it gets thicker on one side move the dough so that the thick part is the part that’s centered on your knuckles. If you end up ripping a hole in the dough, ball it back up, flatten it again with the rolling pin, and try it again. It takes a little practice.

It was a fun goal, and I think just having it inspired others to pick it up. But if I don’t ever do it, it’s OK, because my feet-shaped pizzas taste just fine.

was at a pizzeria, so throwing (and eating) lots of pizzas was mandatory. It is a lot of fun—I particularly enjoyed popping the bubbles in the dough (kind of an Amelié thing). Cheers to centripetal force :)
