learn to make hollandaise sauce from scratch

I want to learn to do this well, and that requires going to a Viking cooking class. I enjoy those classes, anyway. I want to pay off my debt before I spend frivilously, so perhaps I’ll ask for a Viking cooking class gift certificate for my birthday.
