I’m skipping the juvenalia, but I thought I’d start with Lady Susan, a short epistolary novel Austen wrote in her late teens/early twenties. It was never published during her lifetime.
It’s about a beautiful, charming, ruthless and selfish thirtysomething widow whose goals in life are a. getting a new (young, handsome and rich) husband and b. getting rid of her annoying teenage daughter. It isn’t a brilliant book, but it’s quite funny (if you remember that Austen’s world isn’t always romantic).
Someone should film this. Or make a modern version, that could be interesting.

Northanger Abbey
Mansfield Park
Pride and Prejudice
Emma
Sensen and Sensibility
Persuasian
I need to read her juvenilia, Lady Susan, The Watsons, Sandition, and her light verse

I’m close! I’ve read:
Pride and Prejudice
Emma
Northanger Abbey
Persuasion
All four of these are wonderful. I’m about halfway through Sense and Sensibility and am planning to try out Mansfield Park again (I’ve tried reading it twice but had trouble getting into it). I’d also like to read everything she wrote in addition to the six completed novels: Lady Susan, Sandition, and The Watsons.
