    but can’t wait to do it on my own. I’ve been there for every step of the process, doing it several different ways, but that’s no substitute for doing it myself, making my own mistakes, and figuring it out for myself.

    Just bought all the equipment I need to get started.

    until my first brew is done. I’d didnt exactly follow a recipe, 4lbs of brown pre-hopped malt extract, 3 lbs of corn sugar (never again, i didn’t learn about the cidery after taste it gives beer till later) 6oz of crystal, 4oz of chocolate and 4oz of black patent malted barley, and some irish moss. I bottled it last night, it looks almost black till you hold it up to a light, then its the deepest prettiest red I’ve ever seen in a beer. I hope the flavor holds up! (though I’ve tasted it flat and it just seems too watery or something :( )

    I finally made a tasty batch (two actually)! My problem now is that I have 50+ bottles of beer laying around the house. Well, I ‘spose I could have worse things to worry about.

    We finished our first batch a while back and now have two more batches going. It was a rousing success! We made a hefeweizen and were going to keep it around for a while to let it mellow…but it was too good and we drank it all. :D Brewing is really easy.

    So I’ve managed to create nothing so far that is undrinkable (knock on wood), but nothing where I say, “Man, I just have to have some of that!”

    My first brew was an Irish Red Ale. It turned out pretty good, a little too ‘hoppy’ for my tastes. (12/25/06)

    My second brew was a Double Chocolate Stout. Currently in week two of three in bottle conditioning. (1/21/07)

    Up next, a Rogue Mocha Porter clone. (TBD)

    We started tonight…we are making a wheat beer. We got everything from DeFalco’s and it’s starting its primary fermentation in our downstairs bathroom. :D
