Collect all your old bones. YES, even the ones off your own plate. Freeze. When you’ve a solid collection, its time to fill a pot with water & your collection.
- Bayleaf, marjoram, pepper: herb & season to taste
- teaspoon of vinegar (leeches nutrients from stockbones)
- dried mushrooms & dried tomatos
- Put a whole carrot, whole celery rib, whole head of garlic & a whole onion into a pot.
- Light simmer, DO NOT BOIL. I strain the mess into a colander. Skins of veg DYE the broth while simmering all afternoon.
Here’s the thing: use a blender or whatever to PUREE the veggies you want to put back into the pot. Then reduce the liquid to intensify the flavour. You will have the BEGINNING of a fab stew OR soup.
