It’s really a simple, chocolate cake. The flavor is mild and comes from the cocoa powder. The red food color makes it beautiful. This is a cake that people go crazy over when it’s served. The (typical) cream cheese frosting is fantastic, too.
It’s considered a southern cake, but I know some northerners that love it.
There are lots of recipes on the web for this. I prefer to make it with butter rather than with vegetable shortening or oil, though some claim the oil versions are better. Don’t trust the ones that don’t have you make a cocoa powder/food coloring paste; it’s the easiest and best way to get the right color.

okay, that isn’t very helful. how about this?
red velvet cake, when made by a master baker, is moist and sweet. it almost tastes like chocolate cake but not. the icing is everything though. whatever you do, don’t skimp on the icing. make it by hand.
