One of the major parts of this goal for me is to improve my overall comfort level in the kitchen—it’s less about perfecting some fancy techniques and more about being able to cook well with what I’ve got at hand, and cook confidently.
Last weekend was definitely a step towards that. I did not one but several recipes that involved simply adding ingredients to taste until it was just right—potato salad, calico beans, a couple kinds of flavoured butters. Each time I was really nervous about messing up the entire batch, but it was easier than I thought it would be.

Bought a brand-new recipe book the other day, it serves as a visual “reminder” that I am on my way to becoming a fabulous cook!

But actually, that works to my favor because I tend to create my own dishes as a result. I made a pretty decent tater tot, egg and cheese casserole the other day for brunch and today I made paella without seafood b/c I didn’t have any, but it turned out pretty well.
I’m not “fabulous” yet, but I’ve gotten pretty creative so the next step is to perfect the taste.
