I Love sunshine burgers….
and tonight I had a south western one! On gluten free crispy breads… with a touch of veganaise, slices of avocado and tons of sprouts and sliced up peppers with seasoned and splashed lightly with light olive oil…. YUUUUUMMMMMMMM….
This one cost me around 400 calories but I’m within my limits today so I’m OK!

Such a delicious lunch!
Sunshine burger on toasted gluten free flax seed bread with cottage cheese, peppers and alfalfa sprouts to top. Asparagus cooked in vegetable broth for flavor.

Tandoori Rice Pilaf with Chutney Tofu with diced green peppers… Drizzled roasted spicy pepper and tomato creamy soup… 1/4 cup of lowfat cottage cheese to cool the palate : )
Yum.
Cottage cheese has been a real surprise to me all the places I’ve been using it. That and plain yogurt. I keep using them as subsfor where I would be inclined to use a dollop of sour cream.

I’ve talked to a lot of single friends and strangers in passing who say they don’t really make a big deal about meal time. I used to not either.
But it really makes me feel so good when I present myself a dish just as I would expect one from a restaurant… or just how I would present one to the significant other ; )
So I figured I would take some shots and upload them and give some details! : ) I make my meals all around 300 calories a piece so I can spread them out and have 4 a day and stay within my healthy eating goals.
This is “The Sweetheart Breakfast”
Gluten Freeda’s Banana Maple with Flax Instant Oatmeal,
Blackberries, fresh, 0.25 cup
Raspberries, 0.25 cup
Blueberries, fresh,
Nancy’s Cultured lowfat Cottage Cheese, 0.5 serving
Plums, 1 fruit (2-1/8” dia)
Calories- 284
Fat-3
Carbs- 52
Protein- 14
I added a TBSP of Omega 3/6/9 that I gulped down for some good fats… around 70 more calories.
I LOVE this breakfast. It’s so filling and it looks pretty : )
