Heather at the Mapua Country Trading Company also sells hop plants with an old beer recipe. This recipe doesn’t include barley (which I’m growing to make my own malted hop beer) but I can’t wait to try it. You need: 120g of hop flowers, 1.5kg brown sugar, 500g honey (or to taste), 2 tablespoons black treacle, 1 teaspoon citric acid, juice of two lemons, beer brewing yeast (available from Bin Inn) and enough water to make up to 20 litres. Gently boil 75 percent of the hops in a large covered vessel with some of the water for 45 minutes. Add the final 25 percent of hops and boil for a further 15 minutes. Strain the liquid off the hops and set aside. Put all remaining ingredients, except the yeast, into a clean brewing vessel. Add the strained hop liquid and stir until the sugar and honey dissolves. Fill the vessel to 20 litres with warm water. Once the temperature is around 20 degrees add the yeast and let it brew. It will need to be kept between 20-25 degrees to brew well. Bottle in clean plastic soft drink bottles once it stops fermenting (around 7 days), add one level teaspoon of sugar in each bottle. Store in a warm place for 3 weeks until the bottles go hard and then keep it somewhere cool. It will get better with time, up to around 6 months.
