Yummm . . . vegetarian chili, in keeping with my resolution to be a 3-day-a-week vegetarian. I’ll top it with a little cheese and add some Jiffy Corn Muffins if I have the mix.

I am going to alter this to four days a week, with leftovers on Wednesday. This past Wednsday, we had leftovers and I had an Internet-free morning before I went to work. I got so much done!

Made four dinners last week and leftovers one day. Two lessons learned . . . no round steak: it is the proverbial shoe leather. Lesson 2: No crock pot meals that require 47 steps and ask you to cut up chicken thighs. Ewwwwww!

I subscribed to the Crock Pot Menu Mailer from menumailer.com. Crock-potting fits my shecdule—I have time in the mornings and work mostly afternoons and evenings.
Now, four healthy, yummy dinners may not seem like much, but I do not cook. For years, it’s been pizza, takeout, sandwiches, and frozen, heat-in-oven type things. Part of it has been pain-my feet have hurt too much to stand on. Part of it has been that I just hate cooking. Part of it has been just too much hassle with hubby-does not want to eat now, does not want this or that. My philosophy is, if I cook it, he can friggin’ well eat it and be grateful. Also, I wanted to cook when I got home and get it over with, he wanted to eat later.
Crock pot meals solve the problem. They are yummy, and we can eat whenever we like. Yay!
