We’ve been eating at home a lot more lately because of finances mostly, but it’s a good thing.
Tonight was kielbasa, cabbage, onions and boiled potatoes.
Hmmm…typing it all out makes it sound nasty, but it was good. LOL

So the nights that we are both home together, we have been trying to cook. I have been working a lot of nights so it’s going slow. Last night though we both had the night off and made tenderlion, mashed potatoes and corn. Very tasty!

Well I asked Kevin to make me a food list for when I went shopping and I messed up. It said three pounds of hamburger and that is what I bought. So last night we made three dishes for the hamburg that we will be eating all week: Penne Tomato Basil, Taco Mix and burgers. All becasuse to use the burger we had to defrost it all. Oops, now I know better for next time.

Chicken Pesto:
Prep Time:10 min Total Time:35 min Makes:4 servings
1/3 cup KRAFT Shredded Mozzarella Cheese, divided
1/4 cup pesto
1/4 cup GREY POUPON Dijon Mustard
4 small boneless skinless chicken breast halves (1 lb.)
PREHEAT oven to 350°F. Mix 1/4 cup of the cheese, the pesto and mustard until well blended; set aside.
ARRANGE chicken in single layer in 13×9-inch baking dish. Spread pesto mixture evenly over chicken; sprinkle with remaining cheese.
BAKE 20 to 25 min. or until chicken is cooked through (170°F).

I haven’t been cooking a lot at home because I always got fed at work. (I work in a restaurant) and it’s boring cooking for one. But now that I’m moving in with my boyfriend I want to cook more at home. We both have cooked a couple of times for eachother but we usually order or eat out. (He’s a sous cheif and cooks all day) He said he wants to teach me how to cook. So it should be fun and I think in the long run it will save us money.

Why can’t I make this happen? It’s so weird. Even to have someone ask me, “What’s for dinner tonight?” makes me feel kind of itchy and irritable.
I bought a cookbook and everything but I can’t seem to make myself do the process of buying the food, storing the food, and making the food.
My poor kids are going to grow up thinking everything comes pre-cooked from BJs.

And instead of ordering out (which I really wanted to do), I put hamburgers on the grill for me and my son.
I’ve been trying to do more of this, though I’ve been “cheating” by buying ready made food. At least it’s not eating takeout!

OK, maybe I have started to cook at home more often but I think I have to vary my diet a bit. It’s not that I think it’s boring to eat my favorite meals over and over again but it’s definitely boring to cook the same meal over and over again.
