I made the yummiest chocolate cake…easy & totally low fat & low cal.

cake mix…and diet soda! No lie, it comes out so freaking moist & uugh too good. My family loved it. I also made a lemon cake with a diet sprite & that too was awesome. Its the yummiest stuffs ever!

I also created a banana chocolate chip muffin that was made with applesauce instead of oil, splenda instead of sugar, & yogurt OOOOOH man! My family ate them all in 2 days they didn’t stand a chance. :)

I’m making stuffed cabbage. I used ground Turkey instead of ground beef…and I have a lemon pecan bread going in my new bread machine :) if you could only smell my yummy kitchen! :P

I used to have the goal—”cook more”. I felt it was vague. So basically I want to get into the habit of cooking more.

Goal: I want to cook something new each week for 2 months. This way I’ll get myself into the habit and realize that cooking is so bad. If I still hate doing it or still would rather be lazy and order in..then i will make a new goal.

I’m going grocery shopping tomorrow so I need to find a great recipe to make for this week.

well starting with Thanksgiving 12 months ago

I made a ton of new things…A chocolate truffle pie, a grasshopper pie, pecan tarts, & even some tasty sweet potatoes…I’d never thought of adding orange juice to them!! So dang good. It all came out great & I had rave reviews from family members I was incredibly happy with it all.

well I havent exactly been doing this. I’ve been resorting to my usual comfort foods. But come Thanksgiving I’ll be making an assload of new things I’ve never made before…Ill capture images of it all and list them…that should make up for some of the time I have lost on this goal ;] haha at least thats what I’m telling myself.

loads of new stuff 15 months ago

I made some carrot pumpkin muffins this morning :) super healthy nice breakfast on the go.

Tonight I made shrimp alfredo pasta with broccoli and tomato and the other night I made stuffed bell peppers with ground turkey and a zucchini casserole OMG it was so good :) I took some to my co worker for her to try and she loved it! :) she asked me for the recipe right away “slammin” was how she described it hehe

The other day I made lemon blueberry crepes for breakfast & my son LOVED them he ate 5 haha I even cooked up some apples and used the apples for home made applesauce used it for baking my son and I also ate it in apple pancakes :) so good!

I had a co-worker recommend this to me the other day. When I looked it up I thought it looked really good and started to crave it. I modified mine though, instead of using ground beef I used ground Turkey…I also added a homemade beef gravy and it was SO damn good! Hubs and I had 2 helpings each :) and today I’m taking some for lunch & for the co-worker who told me about the recipe! I loved it.

Pumpkin Pie Chocolate Chip Cookies 17 months ago

Needed to use up the leftover pumpkin puree from last week’s scones. Just like regular chocolate chip cookies except added: pumpkin, cinnamon, cloves, nutmeg, ginger, and a little extra sugar and flour to balance the extra moisture. Voila!

And…of course I took pictures! (FOODPORN)

Risotto with Asparagus and Morel Ragout 17 months ago

Slightly modified recipe from Epicurious. My first time cooking with morels. Tasty!

Changes I made:
- vegetable broth instead of chicken broth
- shallots instead of onion…because I felt like it
- water with a splash of vinegar to replace wine (I don’t drink much, and therefore don’t really keep booze in the house)
- cooked asparagus about half the time the recipe said to
- used about half of the lemon zest recipe called for

I have a lot of cookbooks and food magazines. I’m not very organized however, I tend to make things on a whim. I keep a list of recipes I’d like to try….and refer to it sometimes. I’d like to get in the habit of trying a new recipe each week from one of my cookbooks or magazines. So far this week I’ve made two new things…Salmon Wraps with Couscous and an herbed cream sauce, from Tyler Florence. I also made my own concocted version of Pork Chops Milanese with a mushroom, onion herb gravy. My hubby said both were keepers.
