Own a Restaurant... 17 months ago

Ive been cooking my enire life.
Ive worked in fine dining restaurants in Massachusetts, Maine, Seattle, Maine and now Houston. I would someday like wo own my own restaurant. It would be mostly traditional Sicilian and Italian cuisine. Large portions and low prices… “The way it should be..”

I have always loved food, any type of food. I cook anything and I’ve tried all kinds of crazy things. I’d love to own a cafe style restaraunt that serves Samosas and Rabbit Stew, Ostrich burgers and Beef and Ale Pies…just don’t know where to open it…and I couldn’t be the cook…I crack under pressure!

When thinking about what I want to be when I “grow up”, owning my very own restaurant is something that I’ve always seemed to come back to. The past few months I’ve been developing the idea and I’m positive that it’s what I’m going to be doing (sometime in the next 20 or so years.) It’s going to be a pizzeria: pizzas, sandwiches, salads.. the works. I think I’ll call it “Minore’s”, which is my nickname in Italian. I know I’ll never forgive myself if I don’t at least try.. But that’s for later, the Air Force is now.

I worked at a restaraunt called “Pizza Antica” in the infamous Santana Row of San Jose. Only infamous to those who dislike highly overpriced anything for people who want to be in style and feel like they are in europe when really they are in the armpit of the bay area.

So I decided that I dislike restaraunts very very much because most managers are the same, they drive people. I don’t like having a mental whip at my back all the time, and I don’t like pretentious attitudes asking me to get them a special bottle of wine. Wine service is hell.

So screw restaraunts, I’m thinking of starting a catering service.

whenever i was a little kid, i always wanted to own a restaurant and name it after my name (how conceited, i know). instead of playing getting married or whatever girls played, i always played owning a business. it was great! i am a dork, i know. i guess i liked the idea of my parents owning a restaurant because whenever i would go to the restaurant we used to own, there was a homely feel. i liked the interaction with the customers and how they would share their stories, it was entertaining.

There don’t seem to be enough good date places here. It’d be great to put up one—cozy, candlelit, just oozing with romance (sans the cheesiness).
