My fiance and I both want to eat at home more often in order to save money. Right now, we have a few recipes that we lean on heavily…and we end up eating them so often that we burn out on them. What I would love is for us to have a repertoire of 25-30 recipes that were all 1) quick enough to be made easily on a weeknight after work, 2) relatively healthy, 3) yummy! So that we could just rotate through them, not having to have any one dish more often than once a month or so.
To do this, I think we have to start trying new recipes, which takes time. But my mother-in-law got me a subscription to some “Quick & Easy” cooking magazine that comes every other month, and it’s a good resource. I also like epicurious.com.

Awesome recipes!
I’ve tried 3 so far and they have all been pretty good and don’t take too long. Great flavor for low-fat real recipes.
Good so far: Shrimp Scampi, but with tofu since I’m vegetarian

I don’t mind cooking, sometimes it’s even fun, but not lately. I HATE cooking. I come home from work, and I’m tired, and I feel lazy, and I don’t even know what to cook or what I want, but I do know one thing- I don’t want to cook anything I have!!
And I don’t want to cook anything I know how to cook! I swear I used to know more recipes, but it seems now the only things we ever make are spaghetti, chicken, hamburger helper (because we’re THAT lazy), some other kind of chicken, another kind of chicken, burgers, I can’t even think of anything else. That’s why we never cook. I don’t want to eat ANY of that anymore!
I need new things to make. I don’t want to spend an hour or more preparing food, only to pick at it and not eat it, because I’m sick of it, so I did some exploring today and found 4 new ideas. Most of them seem pretty easy too, which is great, and a couple are ones that you can even prepare ahead of time and freeze or would just be good as leftovers, so you can get a couple meals out of them. Now that’s what I’m talking about!!

I love food, and I especially love to prepare my own. I like to experiment with different meat substitutes and international products. I’d love to have a greater recipe base to work from when I’m preparing a quick lunch for myself, or preparing a stellar meal for my boyfriend!

since my brothers are such kfc freaks, i decided to try this recipe i found out for dinner.
turned out well and taste almost the same as the orignal. the only drawback is the lack of KFC gravy. :)

Yesterday, I made onion rings for merienda. I just found out what makes it so tasty and crispy. And that’s half a can of San Mig Lite. Thank goodness my brothers didn’t get drunk haha.
As for dinner, I tried cooking beef with broccoli. Had to marinade it first for 5 hours so the meat will absorb all the flavor. I also learned that par boiling vegetables (boiling it for about a minute) will make the colors brighter. Also, incorporating egg whites in the marinade makes the meat tender (I just theorized this). The result, beef w/ broccoli that almost tastes like the ones we have in restaurants. :)
The pictures aren’t mine by the way. I just borrowed it. It’s hard to take photos coz once I place them on the table, they disappear immediately. Maybe next time I’ll take pictures of my concoctions. :)
