Lentil shepherd’s pie doesn’t sound too exciting and there’s a lot more to a slow cookery than simply throwing raw food in and turning on.
I wanted to use Quorn rather than lentils but as I was already changing some of the base vegetables decided not to go off on too much of a tangent on my first attempt.
I was at home yesterday so was able to set this going in the afternoon ready for hubby to come home to.
When he came in he made the usual comments about it smelling good but when we sat down to eat he was only halfway through his first mouthful when he started making sounds of joy!
The flavours had cooked so well together that it was so much more rounded and complete than something cooked much more quickly. We’re both converts now!
Even though I got a relatively small slow cooker we have both got another large helping of the same for tonight.
Lucky for us it tasted scrummy!
