How I did it: Watched a couple of videos of people cooking the taco filling.
I made tacos just last night – they were pretty delicious.
Here’s a good tip: those premade corn taco shells are OK, but if you want a healthier taco get your own low carb/low calorie fajita size tortillas, set the oven to 400 degrees or so, and drape the tortillas over the spines of the oven rack (I do two at a time so there’s room for fillings. When they bake they’ll hold their shape! I think they taste better too :) 6 years ago
So I’ve actually made these tacos twice now. The first time I made them was about a fortnight ago. They were so good that I kept the goal here because I knew I wanted to make them again already!
Now that I’ve taken up my brother’s way of making tacos (thanks to his 3 months in Mexico), they are easier to make. The secret: make a salad out of cubed cucumber, tomato, lettuce and onion. Drizzle some oil and lemon juice on top. Having it all in one bowl makes it faster to eat from, and easier to tidy up than having every condiment in its own bowl.
I think this will now be part of my regular rotation of cooking dishes, as it really doesn’t require too much time of effort! 6 years ago
