In this day and age, it is assumed we need a teacher for everything and that we are incompetent at any basic requirement without having been taught by someone “expert”. This is a sad reflection on our social hang-ups about “expertise” being the only source of knowledge but rest easy; you can empower yourself. Start with learning how to cook by yourself.

i love cooking! i just wish i was better at it (>_<’‘) i usually bake more than i cook, and when i do cook, i keep it pretty simple. i need to practice more so that others can enjoy my food too! (right now i’m afraid of letting other people try things i’ve made in case it tastes bad to them.) the only problem is i hate recipes that call for more than 10 ingredients; it’s such a hassle to buy and prepare everything! :P

Last night I made AWESOME Shrimp Lo Mein. I couldn’t believe how wonderful it tasted!

The weather was kinda dreary and I was feeling soup.
Enter in:
1/2 onion, chopped
1/2 lb celery, sliced thinly
a few carrots, sliced thinly
1 can chickpeas
1 cup barley
1 clove garlic, chopped
tbsp-ish olive oil
5 cups vegetable stock
2 cups water
dash pepper
dash salt
dash cumin
dash paprika
No real method to the madness, just sauteed the veggies with the olive oil for a bit, then added in everything else and let it simmer until my husband got home from work. He called it perfect and asked for a repeat performance soon.
We finished the leftovers for breakfast today, and they were great.

Ok so I’m an ok cook, but at home I tend to eat out a lot and I really want to break this habit and make my own dinner every night. So now is the perfect opportunity to cook everyday and not eat out and in the process learn more about food and how to cook. I especially want to practice using more spices and cook healthier.

Tonight was my first attempt at making risotto , and it turned out very well. Hubby didn’t love it, but he’s an insanely picky eater! Either way, I was happy that the recipe turned out so well.
I just don’t do it anymore. My husband cooks his own dinner because he likes to eat so late. I know it’s not very healthy and I should put more effort into it.
