I used to eat them all the time at a diner in NYC.
My parents went in with a friend of theirs (who lives on a farm) and bought a small herd of buffalo… (or bison… whatever… I don’t know the difference…)
I remember they had to put a 6 foot tall fence around because apparently they can jump quite high when they are younger…
I don’t remember noticing much of a difference from regular beef, but it’s neat to try….
I get bison steaks from our local farmer’s market all the time too… I cook them with red currents or Saskatoon berries, just like Natives once did around here… very tasty, and a lot less saturated fat than other types of red meat.
