Again with the comfort food.... 2 weeks ago

Easy lower-fat strawberry milkshake (nonfat yogurt drink, “light” vanilla ice cream, & fresh strawberries – then blend)! smile

Churned up some homemade ice cream as our main contribution to M & N’s patio supper this evening, using some of the fresh-frozen strawberries that I’d prepared earlier in the week. It was really good ice cream! grin

I processed four cartons of strawberries – washing, hulling, & slicing the fruit – as well as four cartons of blueberries – washing them & sorting out odd bits of debris – with the result that 20 cups of berries (a total outlay of $16) are now in the freezer, ready for future use. smile

to make one of the family recipes I don’t often get around to (adjusting it to lower the fat & cholesterol): it was really tasty!

It’s called Chili Cheese Loaf & features chopped green peppers – for some mild spiciness – along with (lowfat) cottage cheese, (reduced fat) jack cheese, & eggs – which make it creamy, rich, & smooth – a real “comfort food”! smile

a really terrific salad, with ripe tomato and hothouse cucumber sliced into mixed greens, with a toasted sesame mixture lightly dressing it: yummy! smile

good-quality fresh things I found in the market, I put together a guacamole salsa, using:

    two ripe avocados
    two ripe tomatoes
    four small tomatillos
    the juice of two limes
a bunch of fresh cilantro, chopped fine
& salt & black pepper to taste.

    Truly delish! grin
