I always think, gee, this is great; why don’t I do this more often? ...then six months go by before I bake something again.
How I did it: Bought a house and have the space to bake now. Bought a new cupcake pan and some other necessary devices that allow me to properly bake.

my fiancee has this brilliant cookbook that i’ve only cooked from once (and without really following it to a T).
well, i am going to give a go at 2 dessert recipes tomorrow! our best mates are having us over for a fancy xmass dinner, and we’re to bring the sweets. I chose two fruity recipes, since it’s hot & summery here. I’m stoked it try these and get my ‘baking’ on.
i also cant wait to visit the States and help mom bake christmas yum yums.

I baked two more cakes last weekend, one was for a friend of my parents’, and the other for us. They were like the one below, chocolate and nuts.
Next Sunday I’m baking another one because it’s my bestfriend’s birthday.
I made this cake yesterday! It was chocolate with nuts, really yummy :) My mum told me to put some icing sugar and I thought it would look better with some kind of “decoration”, so I cut out a star from a carton and placed it in the middle to create this effect.
Also, two weeks ago I baked my first cookies! The recipe said to put raisins, but I put chocolate chips instead. The worst part is that the first batch I put in the oven kinda burnt xD but the second was okay.
...so I started baking a lot and it was really great and then guess what? It backfired and I started actually gaining weight. I didn’t think that was possible for me, since it’s never happened before. :P
Last week I baked my first cake! :D
I already had done some with my mum, but this time I was by myself, and it was good! It tasted good, but I didn’t put enough baking powder and it was a bit flat, but it’s fairly good, being the first one. I’m happy :)
If you come visit me in New Zealand, I’ll bake you any number of things. Since moving here, I’ve been baking more and I’m really enjoying it. Vegan muffins and cookies are my favorite things to make.
Sound like a plan? Not only do I get to stop concentrating on the problems with my life (which can get pretty stressful) but I get yummy homemade treats too, which I can give out to people to make them happier. Plus, I really like baking…it’s a nice way to end the day. And to top it all off, I stay drug-free. (Not that I’ve ever been on drugs, but it’s a formidable enemy at this point)
