    Vegan Pumpkin Muffins

    These are moist and fluffy, with a hint of molasses and warm spicy flavor. This recipes is for 6 jumbo muffins, if you want to make little muffins change the cooking time to 15-20 minutes.

    Equipment:
    Jumbo muffin tin

    Ingredients
    1 3/4 cups flour
    1 1/4 cups sugar
    1 tablespoon baking powder
    1/4 teaspoon salt
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon ginger
    1/4 teaspoon allspice
    1/8 teaspoon ground cloves
    1 cup pureed pumpkin (fresh or from a can)
    1 tablespoon soy yogurt
    1/2 cup soymilk
    1/2 cup vegetable oil
    2 tablespoons molasses

    Directions
    Preheat oven to 400 F. Grease muffin tins with vegetable shortening or spray on oil.

    Sift together dry ingredients (flour through cloves). In a seperate bowl, wisk together wet ingredients (pumpkin through molasses). Pour wet into dry and combine. Fill muffin tins 2/3 of the way. Bake for 27-30 minutes, till a toothpick inserted in the center comes out clean.

    i’ve decided to add recipes for what i cook (when i can, a lot of what i cook tends to be ‘in the art of the moment’ so who knows!)

    saurekraut i made last week and have been living off of it
    this is my mom’s recipe, but altered for vegany goodness.

    1 large glass jar of saurekraut
    3 shallots, cut
    2 apples, cut in slices
    2 potatoes, cut in smallish chunks
    1 cup of apple juice
    2 tofurky italien sausages, cut
    black pepper to taste
    veggie stock if needed (liquid in saurekraut jars varies), just enough liquid so the potatoes/apples can boil and cook

    sautee “sausages” and shallots in olive oil until brown
    place all other ingrediants in a large pot, medium heat
    add sauges and shallots to the pot
    cook on medium/med-low heat until potatoes and apples are soft
    (about an hour?)

    it sounds kind of gross, i have to admit, but it’s SO SO good

    pumpkin pie was fantastic .. nobody could tell the difference

    stuffing was splendid sans giblits

    and the ordinarily meat-centered family was thankful for the options :)

    (and i was remembered by a near stranger for something i cooked two years ago! walnut stuffed mushrooms .. never again .. they take too many hours to make)
