Tonight’s dinner was entirely whole food. And it was a fantastically satisfying meal. Corn-on-the-cob, salt potatoes, grilled summer vegetables (baby zucchini, egg plant, vidiala onion, tomato, garlic), and watermelon slices. Mmmmmm, I could eat this everyday.

...Off to a good start. The recently improved salad bar at Wegs has this fantastic seven grain salad that I am crazy over! I had mixed greens with the grain salad on top and cauliflower & broccoli lightly steamed with pine nuts. Mmmmmm.
Today I had a great spinach salad with a panini and a glass of red wine while out with mom! For dinner we had mixed green salads with sprouts and lentils and fresh fruit over yogurt.

I challenge myself to buy local fruits, veggies and grains where possible and over the summer, try to eat/serve mainly whole foods!
Our family could benefit from a diet improved by more produce and the reduction of processed foods.
I am excited about this goal!

I started eating more whole foods this week and I feel amazing. Not only does my body/mind feel great, I am proud of myself for making good food choices.

No, but I’m also less attracted to high-bran rotini with feta than a bowl of KD.

I’ve been on whole foods for the better part of 2005. Thus far I no longer have:
headaches
joint pain
brain ‘fog’
energy swings
allergies
digestive issues (I’ll spare details)
asthma (well, almost gone)
and on and on
The first two weeks were hard but after that, the body craves real food. Its smooth sailing from there on and once you alleviate some of your ailments, you have sustaining momentum. Food the way nature intended: unprocessed, uncooked, whole and organic!

Today I made the biggest batch of stir-fried organic veggies imaginable. Two holiday parties this week at work. One will get my “Festive Veggie and Brown Rice Casserole” and the other “Spaghetti Squash Casserole” from the old standard Moosewood Cookbook.
Guess my dishes may look a bit out of place next to all the packages chips and salsa and white bread, but they are usually pretty popular!
