I have the artisan professional (the one that raises straight up rather than tilting). GREAT for bread. Unbeatable.
But try to whip a couple of eggwhites, and it’s a royal pain. This frustrates me, because when I make divinity I need the whipped eggwhite to be in the stand mixer so that I can pour the hot syrup over it and let it beat forever. Right? So I have two choices—either mess up another bowl and hand mixer to beat the eggwhites, and then slide them into the Kitchenaid bowl; or else sort of lift the Kitchenaid bowl up (so that it’s loose from the restraints that normally hold it while it mixes) and hold it in place until the eggwhites are partially beaten.
Another thing I’ve found is that it’s hard to add ingredients to the bowl in between mixings. Tight fit. And taking the bowl off requires taking off whichever mixing attachment you are using, as well. So it’s got its awkward design points.
