Ah, it’s nice to cook. I’m at the point where I’m doing a little. Not a lot, a few things once or twice a week. I’m doing ok.

I made burritos with beans and rice today. I opened the box, cut a slit in the bag and heated it for 5 minutes. It was very good, but I had to make twice the serving size because I was very hungry.
... I should make clear it was a microwave dinner.
well, i’ve been cooking beans. yeah, lame. i made awesome guacmole one day and have been making salads. not much requiring actual cooking and baking. i stopped eating out; i stopped buying breads and cereals and I started buying veggies, herbs, sauces. But I haven’t made anything significant yet. one good meal is all i ask for this goal to be complete. i can go from there.
well: I cooked some beans. Hey, it’s a hurdle for me. Aaand I’ve been making lots of salads. Nothing fancy yet. But time in la cosina.
If I can hit 7 recipes I’m done with this goal. That’s how I’ll know I’m done until I want to learn 7 more.
Currently creating many vegan dishes at a landmark Portland restaurant…its challenging and fun to make something w/o butter, heavy cream, or bacon and then make it taste good! It can be done!
