The Bicycle Wheel by Jobst Brandt is the best book on this subject.
To learn just get some only (and not too out of true) wheels. Take them apart carefully and then you can put them back together.

OK, so i now know how to build bike wheels (went on a course). now need to get my jig, get some practice in (am planning to get some old wheels and rebuild them). then i want to see if i can build wheels for other people.
