I had a fudge accident! I didn’t leave it boiling for long enough because I was lazy and didn’t want to keep stirring it. Apparently that’s a very very very important part of the process – I ended up making burnt goo. It’s still quite nice though…
I’ll try again next week.

Found a recipe! 7 months ago

I was looking for ages for a recipe that sounded easy. Most of them have Marshmallow Fluff in them – what in the name of fudge is that? Anyway, it’s apparently quite hard to get right, and sometimes it doesn’t set. I’m not considering this goal done until I make it perfectly. Attempt one begins tomorrow. I’m so excited!

Ingredients

500g caster sugar
2×170g cans evaporated milk
4 tbsp milk
Pinch of salt
100g butter, cubed, plus extra for greasing
1 vanilla pod, split

Method
silver foil, extending the foil over the edges of the tin. Grease
the foil and set aside.
2. Put the sugar, milk, evaporated milk, and salt into a large
pan. Place the pan over a low heat and stir gently until the sugar
has dissolved, then increase the heat to medium and bring the
mixture to the boil, without stirring. Once boiling, lower the heat
and cook, stirring frequently to prevent the mixture sticking, for
30 minutes.
3. Remove the saucepan from heat and add the butter and vanilla
pod but do not stir. Let the mixture cool, without stirring, for
about 15 minutes.
4. Remove the vanilla pod and beat vigorously with a wooden
spoon until it becomes thick and just starts to lose its gloss
(this should take about 10 minutes).
5. Pour the fudge into the prepared tin, leave for about 30
minutes, then score into 2.5cm squares while still warm. Leave
until cold (it will remain quite soft-textured), then use the foil
to lift the fudge out of the pan. Cut into squares. Store in an
airtight container in the fridge.

There is no fudge in my country…
And all internet recipes suck and don’t work for me… and require all these weird ingredients I can’t get.

I want fudge!!



Perfect Recipe for Me 2 years ago

I found a recipe online which only requires 3 ingredients: butter, chips (chocolate, peanut butter, whatever), and sweetened condensed milk. It’s a pretty forgiving recipe. Considering I can make just about nothing else, I consider this to be an accomplishment.

Ok i have the recipe and I’m definately going to make fudge on Saturday. I have to wait till then as i need to be at my mums house as I have no cooking ultenses worth talking about at my house. Wish me luck!!

Last night, my grandmother came over and taught me how to make fudge. We only made one batch of chocolate last night, but I also now know how to make peanut butter and maple syrup fudge as well. It was really easy and pretty fun too.

i think i screwed it up lol.

for some reason the butter didn’t melt all the way and there appears to be chunks spaced out within my concoction
