my knowledge and command of various recipes and techniques is steadily growing… i was considering entering a part-time culinary program as a hobby, but i think it’s much more affordable and sensible to just keep on independent study and experimenting myself… there are so many good resources out there….

but i’ve spent some time the last couple of weeks mastering the family specialities, a mix of irish-american fare… pretty rustic and hearty, but very pleasing meals… nice too in that they utilize some classic sauce making techniques…
also, i found a place up in one of the scottsdale amex-ego malls a kitchen specialty store that has classes offered occasionally so, i thought that might be something nice to throw in occasionally…

it’s oh-so-inspiring… except for electric heat… but i guess you can’t have everything…

i put on a really lovely dinner party last friday night and served a four course meal that rivaled any of the nicer restaurants in town…
a lot of work, but really a lot of pleasure in hosting… and lots learned in attempting new recipies and new stlyes of cooking…
but cleaning up is a real pain… i wish someone would do dishes for me… =)

It starts with perfect, fresh, flavorful ingredients, which must be prepped seperately, then the dish is built (put together), baked or broiled, and then beautifully plated with a sauce around it… you get the idea. I can’t afford it in a restaurant, but I want to do it at home once or twice.
